Why am I weighing more?

Hi everyone,
I opened this profile a long time ago but never used it. I'm now starting to use it again and don't have any friends lol Anyways, I need help with something. I weigh myself every Friday morning after going to the bathroom. This week I've been eating very healthy, not going over my calories and have not missed one day from the gym. I always do cardio on the elliptical and the treadmill for an hour. Last night I went to Olive Garden and I ate about 900 calories more than what I was supposed to. This morning I weighed myself and the scale read one pound higher than last friday. To weigh one more pound I had to eat 3,500 more calories than what my body burns but that is impossible because I always eat 1,200 to 1,300 calories a day and I burn around 500 calories doing cardio according to my polar ft4. Can it be water weight since the food from last night had a lot of sodium? Please tell me if I'm correct or not.. thank you!!

By "eating healthfully," what do you mean?
I can eat what I consider to be quite healthful foods but if I eat too much of them, I'll gain weight.
How long since you re-started...can you open up your diary? Do you have at least a few days worth of entries in there yet?
Are you certain you're only eating 1200-1300 calories a day?
The Olive Garden "gain" could be water or the weight of the food...what exactly did you eat there?0 -
Yes, it's most likely water weight. Restaurant food, generally speaking, is fairly high in sodium.0

When I said "healthy eating" I mean fruits, veggies, chicken, greek yogurt, pistachios, lentils, beans, etc.. My nutritionist says I can eat those things. I've been couting my calories with this page caloriecount.about.com. I started using MFP about two days ago.
And last night I ate two breadsticks, salad, classic calamari and shrimp scampi fritta. My hope is that I'm weighing more Today because I ate that last night and not because I'm doing something wrong or over eating during the week.

Something else to keep in mind... weight loss is never linear. 1lb is well within normal fluctuations for body weight. Don't worry so much about week to week changes in weight, focus more on month to month... watch for long term trends in weight, not short term fluctuations.0

That one pound could be your TOM coming. One pound in the grand scheme of things isn't much to worry about. Like another poster has said, you should look at month to month. Log your week to week numbers and then plot them all on a graph. You will see the trend of up or down fairly easily this way. Then start to worry about upward trends if that is the case. In this case, it should only be water weight though.0

Probably retaining water due to all of the sodium (each breadstick is ~460 mg of sodium!), plus there's also the weight of the food as it's working its way through your intestines.0

yes, water retention due to high sodium. Drink lots of water, as it will help flush it out.0

Either it's normal fluctuation
Or all the food from last night
Or you have been eating more than you realized and gained a pound of fat.0
