So I'm going out of town for 8 weeks this summer and will be with my in-laws. Yes, crazy, I know. Here is my problem...although the meals will be relatively healthful, they serve meals family style with my FIL 'dishing up' the hot stuff. I was planning on bringing my food scale to measure everything but don't want to come across as rude or high maintenance. Plus, I'm pretty set in what I have for breakfast and lunch and will most likely not be eating the same as everyone else. Dinner is going to be the most challenging. Any suggestions on how or what I can do to make this manageable?

I would not use the scale. Go with "a pint's a pound the world round" which is an oversimplification and not always true, but probably close enough. Then think about things in terms of how many half cups you have; you can even separate them into little piles. Before you go, try measuring a few common foods in a half cup. It's not that hard to get it mostly correct. I recommend this partly because of the social aspect; yes you will come across as rude or high maintenance if you weigh things. Whether that's deserved or not is not the issue. I said partly - the other reason is I think that is what you should be striving to transition to anyway. I don't weigh or measure anything anymore and I am doing fine.
EDIT - oh yeah - use 4 oz for every half cup even if you think it is lighter than water because you will probably be right - it probably is lighter than water, but will like under estimate how much you have.0
