Spinach Quiche

1 cup baby spinach (I buy the bagged baby spinach and cut the stems off, and cut it into smaller pieces with a pair of kitchen scissors. Takes a bit of time but is worth it. Go through the bag, 'stack' a bunch of good leaves on top of each other, and cut the stems off all at once with scissors, then into small pieces into a 1 cup measuring cup until you have enough)
1 cup fresh white mushrooms (diced)
1 cup eggbeaters
1/2 cup shredded Mozzarella cheese OR mexican blend cheese (2%) or shredded cheddar (2%)
(just make sure it's the 2% fat kind).

Preheat oven to 350. Mix all ingredients together and pour into a PAM-sprayed pie plate.
Bake for 30 minutes. That's it!

This stores well in the frig but I've never tried freezing it.

    Ahhh, I live off of quiche!!!!!! And spinach. Eggs, spinach. I've never thought of putting motz. on mine though. I'll try that next!!! :)

    If you want to try something absolutely amazing take two pieces of wheat bread (Whatever bread you love, I use 45 calorie bread) and tear it into pieces and layer it at the bottom of your sprayed pie pan. Some of the egg soaks into the bread and add some amazing texture and flavor to the quiche. Soo good!!
