Clam Chowder
Here is a quick and simple clam chowder that always satisfies me. 1 can of cream of potato soup and 1 small can of chopped clams. Just add the clams, juice and all, to the cream of potato soup. Then add 1 can of milk (whole, skim or low fat depending on what your calorie limits are). Frankly, I use just a can of water, but whole milk will taste much richer. Add a pat of butter and bring to a simmer. Simple, easy and low cal. Enough for 2 servings and around 150 cals per serving if prepared with water, and 240 cals per serving if prepared with low fat milk.
