Slow carb diet for vegans?

So I've been really interested in the slow carb diet (4 hour body) recently. You don't eat any traditional carbs at all, just protein (e.g. lean meats for most people), legumes (like pinto beans, lentils, etc.) and vegetables. I think that this would definitely get the weight off me fast, because simple carbs are my nemesis. And it is simple - oh so simple! - and really cheap and quick, a must for a student. But the thing I am a little unsure about is the protein element. Clearly, there are loads of vegan sources of protein, but most of them also involve a high proportion of carb. Brown rice, for example, is banned, as is bread. I could have hummus, but I'm reluctant to add too many "pulse" type foods beside the legumes for the sake of my tummy! I considered quinoa, but I don't know if that would be considered similar to brown rice in being banned? Or should I just skip out on the protein constituent, given that the beans are one of the vegan foods with the highest proportion of protein in them anyway? Has anyone else tried this diet? What did you eat? Any vegan recipes? And if you're maintaining, do you stick to it the whole time, or is there anything you do to maintain a more conventional way of eating?

Nemesis in what way? You mindlessly indulge which causes you to be in a caloric surplus?
Nothing wrong with carbs per say, just limit the portion sizes so that at the end of the day you are still within a caloric deficit.
If eliminating "fast" carbs (whatever fast carbs are supposed to be) allows you to have overall better dietary adherence , then by all means have at it.0
