Tofu skewers

INGREDIENTS
For Marinade
2 to 3 garlic cloves, peeled, and roughly chopped
small knob of ginger (about 1 inch)
1/4 cup cilantro roughly chopped
1 green cardamom pods, pods removed and seeds ground
1 teaspoon garam masala
1 teaspoon cumin powder
1/2 teaspoon chile powder
2 tablespoons freshly squeezed lemon juice
2 tablespoons honey
2 tablespoons Greek-style yogurt
Kosher salt ( to taste)
For Skewers
10 1/2 ounces High protein, extra firm tofu, cut into 1-inch cubes ( Trade joe's or whole foods
1 large red onion, cut into 1-inch cubes
1 large green bell pepper, cored, and cut into 1-inch cubes
1 cup Grape tomatoes
1 cup Pineapples, cut into 1-inch cubes
Pam spray, for greasing
6 wooden skewers, soaked in water for an hour
Chaat masala, to sprinkle
DIRECTIONS
For the marinade: Toss all the ingredients in a blender and blend to make a paste.
For the skewers: Add the tofu, onion, tomatoes, peppers and pineapples to the marinade.
Cover the bowl with plastic wrap and allow the tofu and vegetables to marinate for 30 to 40 minutes, or longer in the refrigerator.
Thread the vegetables and tofu alternately onto the skewers and place on the baking sheet. Grill the skewers in on grilling skillet for 5-7 minutes, turn and cook for another 5-7 minutes, or until charred at the edges.
