I'm not much of a bean recipe person (I'm a "little bit of this, little bit of that" kinda of bean cooker), but this is how I usually prepare beans...
Presoak your beans overnight (seriously reduces the gassy affect and cook time), and then cook them with a carton of veggie broth (chicken or beef is good too), a large can of crushed tomatoes w/basil, water, chopped onion and carrots, garlic salt and black pepper. Very tasty, and simple enough where you can add other stuff when you reheat it. I like to add things like chopped turkey or hot dog, asparagus, shredded brussel sprouts, pepita seeds, spinach, grated cheese, raisins, etc. My favorite are black eyed peas (just don't over cook them), pink beans, pintos, and, though they aren't really "beans," green or brown lentils (don't need to presoak those).0 -
The 15 bean soup is great! It's in my rotation of healthy meals, and freezable too.
They can be bought already mixed from the store.

My current favourite is just black beans with cumin mustard and a bit of sriracha. Add that to a spinach salad with some green onion and maybe some chicken and you've got a delightful, quick meal!0

This one is a real crowd pleaser and a different take on beans. I always get asked for this recipe and it's quick!

I make this home-made hummus and freeze the portions in to 1 tbsp nuggets. One of these nuggets goes in to my lunch bag for a snack. I spread on a finn crisp.

I use the following recipe with a few changes. I use two pounds of beans total. One pound of pinto beans and one pound of either black, navy, or northern beans. I soak the beans overnight, drain, and rinse them. I only reduce the the salt to 3 teaspoons and add 1/4 cup of vinegar to the cooking water. It freezes well.

I use dried beans -- so far had Mung, soy, black eye, chickpeas, black lentils.
Soak overnight in at least 3 times the amount of water -- flavoured in a way you like. Chicken stock is okay, but you can also add a tablespoon of Tamari or another sauce you like.
E.g. The chickpeas or lentils triple their volume overnight, and they will take up some of the flavour with that.
I have both used the same water for cooking and on other occasions thrown it out and used fresh stock/flavoured water for cooking the next day. Cooking time is much reduced.
Drain, mix with diced cucumber, tomato, capsicum (bell pepper), avocado, herbs. Add a vinaigrette dressing -- healthy lunch salad.
Greek Black Eye Bean Salad is really a tomato salad with shallots and black eye beans. Marinated in a vinaigrette of olive oil, vinegar, salt, pepper, seasoned with parsley and mint, and left to stand for a while to infuse the flavours.
Mix black lentils cooked in a flavourful medium like above to boiled/steamed rice 1:1 or 1:2, it gives a wonderful almost complete meal.
Of course you can make lentil bolognese where you use lentils instead of meat, and have that with pasta, or layer it in lasagna.
Dhal, bean curry, of course, with rice or bread.

Black beans pan fried with chili powder and cayenne, then tossed on a sweet potato with sour cream. Mmmm.
Or black beans mashed with taco seasoning, put in a taco with some cheese. One of my favourite dinners!0
