Crunchy Thai Chicken Salad
I have used turkey in this instead of chicken. The nutrition is for chicken
Crunchy Thai Chicken Salad
Servings: 4
Serving Size: 1.5 cups
Nutritional Information: 222 calories, 4.8g of fat, 15.2g of carbohydrates, 3.8g of fiber, 31g of protein, 10.2g of sugar
Weight Watchers® PointsPlus®: 6 *
Ingredients
1 lb. cooked boneless skinless chicken breast, chopped
4 cups shredded cabbage or chopped stir-fry mix (I used a stir-fry mix with cabbage, bok choy, broccoli, and pea pods)
1/4 cup cilantro, chopped
1 red pepper, chopped
1 mandarin orange, peeled and chopped
6 green onions, chopped
2 tbsp. soy sauce
2 tbsp. rice vinegar
1 tbsp. lime juice
4 tsp. peanut butter
1 tbsp. water
1-2 tsp. Srirahca
1-2 drops Stevia (or 1 tbsp. honey)
Optional: 1/2 tsp. fish sauce
Instructions
Make the dressing by mixing together the soy sauce, vinegar, lime juice, peanut butter, water, Sriracha, Stevia (honey), and fish sauce.
Toss together the cabbage/stir-fry mix, pepper, green onions, orange segments, and chicken.
Add the dressing and toss to coat.
