my current favorite is an omelet.
4 egg whites;
8 grape tomatoes unsliced;
a cup (or more) of mushrooms;
2 cups of raw spinach.
I let the veggies cook a bit and then add the egg whites. I use zero-calorie cooking spray...but olive oil would add wonderful flavor.
all in, the meal is around 150 calories (depending on how many veggies you put in).

When I want to pig out but keep the calories down, I make white radish (Dikon) hash browns. Shred them up with a cheese grater or food processer, press them dry with paper towel. Heat up a frying pan throw them in with just a little bit of oil. Smother with low sugar ketchup. Very filling and just 16 calories per 1/2 cup. Better cooks can add lots of spices to make it more flavorful. I enjoy them plain. :-)
