No, that is not why rice is used.
Quality sushi rice runs well north of $15 a pound from quality providers. By well north, I used to live in Japantown in SF, I would buy some sushi rice from a market there that was hand polished, and $45 a pound.
Quality sushi rice when properly dressed forms the correct bind to build the rice portion of nigiri.
Rice is used because it is the traditional food that was eaten with the first sushi, and is the only grain that can do what it is needed to do.0 -
