    No, that is not why rice is used.

    Quality sushi rice runs well north of $15 a pound from quality providers. By well north, I used to live in Japantown in SF, I would buy some sushi rice from a market there that was hand polished, and $45 a pound.
    Quality sushi rice when properly dressed forms the correct bind to build the rice portion of nigiri.

    Rice is used because it is the traditional food that was eaten with the first sushi, and is the only grain that can do what it is needed to do.

    And yes, brown rice sushi is nasty. And my children call quinoa keen-yuck.

    Now that we've all established that you'd need to eat mountain loads of rice for an extended period of time before the arsenic levels can do you any harm, I think we should divert our attention to the toxicity that is baking soda. Sodium bicarbonate? More like So long bye it's too late.
    Lots of people use baking soda just dont ingest too much bc it will kill you. It is used as a alternative therapy for cancer patients. It is used to brush teeth. Try baking alot of certain foods without it and see what happens. They are talking large quantities!

    I apologise for being so poor at jesting about baking soda. Also, I'm pretty sure if I ingest too much of anything, it will kill me, but thanks for the advice.
