Carne Asada Fries
I had these for the first time since moving to San Diego 2 years ago, and I was sort of blown away by their taco shop 3 in the morning after a drinking binge glory. Then I was like, hell, I could make these healthy at home.
Oven fries: 1/2 potato, sweet potato, or butternut squash cut into fries and baked on a sprayed baking sheet at around 400 degrees until crisp and browning
Covered with: shredded cheese (optional; throw on top of fries under broiler to melt), 2-3 whole pickled jalapenos, 4 oz carne asada cut into bite sized pieces, pico de gallo, chopped onion and cilantro as garnish, big blob of fresh guacamole
Devour with: gusto
Comes at between around 400 and 600 depending on how exactly you make them. Even a bit lower made with squash instead of potato.
