Thanksgiving traditions

This year I am having a turkey prepared by someone who a) is not from the US and b) has admitted to never making a turkey before. My husband and I will be the only native born Americans over the age of 10 in attendance, so I have no idea if there will be any other (attempts at) traditional offerings.
Our private tradition is a big recipe of Jambalaya that lasts for days. My husband made it for me our first Thanksgiving when I was recovering from surgery and couldn't stand long enough to make an elaborate meal. The following year, I told him it was tradition, then it caught on. This is actually the third year in a row when we didn't eat our Jambalaya on Thursday, but we keep up the yummy tradition somewhere around the holiday. And, I just entered the recipe in MFP and realized it has about half the calories of most commercial Jambalayas!
What are your Holiday Quirks?

Thanksgiving tradition for us is to leave right after eating and head to a cabin up north in the snow to cut down our Christmas tree. VERY much looking forward to it!0

Up until I started dating my husband, I always went to my Mimi's house for Thanksgiving. We ate the traditional dinner and just spent time together. We generally "dressed up" to go to her house. Nothing too fancy though.
We moved closer to my in laws and my Mimi passed away, so we do Thanksgiving with my in laws now. It's very laid back and casual. No one dresses up. In fact, I am pretty sure one year, someone was in their pjs.
I am hoping once we get settled in next year in our new place, we will start more traditions within our little family.

-Cream cheese on celery as a snack while the cooking is happening/waiting for dinner to be served.
-Apple crisp as a side dish. I only now realize it's meant to be a dessert. Not in my household!
-Eating dessert a few hours after dinner.
-Dinner served at 1 or 2 pm.

Thanksgiving dinner is served sometime other than during the Cowboys game. Snackage usually includes chips and queso or other tailgating-type foods, and then we pig out on the turkey later on.0

Apple crisp sounds way more appetizing to me than those candied yams <bleh>

Far and away my favorite holiday. A parade, a dressy restaurant buffet, bowling and maybe a movie at the theater. We bop around the city on foot, and burn off all we eat.0
