How long will unfrozen butternut squash stay fresh in the fridge.
Or at least useable?

    If it's whole (uncut), it could be good for several months. How long exactly depends on if the stem is completely removed, if the skin is undamaged, how long it's been off the vine, etc. Winter squashes have a hard skin that allows them to remain edible for months if properly harvested and stored.

    so sorry, i should've mentioned that it was pre-cut.
    trying to cut down on prep time, but forgot about it in the fridge for a week .... whoops!

    I think probably a week. But you can tell by the look / touch / small if it's gone bad, fortunately it's not like meat where you can't tell.

    If it smells "off" or looks discolored, or feels slick or slimy when you touch it, throw it out.
