Chia seeds (need help plz)

Chia seeds don't exactly make a pudding-like consistency, so calling them "pudding" isn't exactly accurate. You can make creamier "pudding" though, and here is my favorite recipe:
1 cup almond milk
2 tbsp chia seeds
2 tablespoons rolled oats
a squeeze of a lemon (about a tablespoon)
sweetener of choice (I like maple syrup) to taste
1 tsp vanilla
1 banana
some raisins, shredded coconut, cinnamon and crushed walnuts to taste
- Add the milk, chia seeds, oats, lemon juice, vanilla and sweetener to a blender and blend until everything is totally blended.
- Add the raisins if you like them slightly puffed, otherwise, leave for later.
- Cover with plastic wrap and place in the fridge for at least 3 hours or overnight.
- In a bowl, mash half of the banana well until it forms a puree.
- Add the chia seed mixture to the bowl and stir well until the banana is nicely incorporated.
- Cut the other half of the banana into cubes and add to the mixture.
- Add the raisins (if you haven't) and the walnuts and mix them in.
- sprinkle the shredded coconut on top and add a dusting of cinnamon.
This is a large portion that fills you for hours.0 -
