Low Cal Gluten Free Flourless Healthy Mince Pies

Since it's Christmas and festive treats are everywhere, I decided to try to reinvent one of my favourites but healthy! :) These are much lower in calories, fat and sugar than your average mince pie, but more importantly contain natural healthy ingredients !

This Recipe made 4 Mince Pies for me, using my Mickey Mouse cupcake moulds, therefore servings may vary (you may need to double or triple the recipe if making for more than one person..!)

Ingredients

55g Oat Flour
40ml Semi Skimmed Milk
1 Tsp Sweet Freedom Sweetener (or other liquid Sweetener such as agave)
Optional; 1/2 Tsp Cinnamon
10g of Mincemeat for each Mince Pie (I used Organic Natural Mincemeat by Meridian)

Method

Preheat your oven to 190C.
Oil / butter / spray your cupcake moulds / tray.
In a bowl, combine oat flour, cinammon (if using) and milk until a dough forms.
Add in the sweetener and knead the dough.
Either by rolling out and cutting out rounds, or by placing into cake moulds, make a bottom and top for each pie.
Place approx. 10g of mincemeat in the center of each pie.
Bake for approx. 15 min until slightly golden / crisp on the edges.
(You may want to secure the edges of the dough with a little water dabbed onto the edges to 'glue' them together)
