Cranberry Sauce (good to mix in with oatmeal or cottage cheese)

12 oz. bag fresh cranberries
1 cup water
1/2 (kinda tart) to 1 cup (very sweet) Splenda/sugar/sweetener
1 envelope unflavored gelatin (optional, adds 20 calories to the entire recipe)
Combine Splenda and water in a medium saucepan. Bring to boil; add cranberries, return to boil. Reduce heat and simmer for up to 10 minutes, stirring occasionally. (You may want to take it off before 10 minutes if you don't like mushy textures.)
Use gelatin only if you are not using sugar (because the cranberries bind together better with sugar instead of sweetener) or want the dish to be pretty as a stand-alone dish.
Calories with Splenda and without gelatin: 21 for 1/4 cup
