Southwestern Vegan Chili
1 tsp olive oil
1 tsp minced garlic
1.5 cups vegetable broth
1 cup organic frozen corn
28 oz can diced tomatoes
1 can black beans (drained)
1 can kidney beans (drained)
cumin to taste
chili powder to taste
red pepper flakes (optional)
1. saute minced garlic in olive oil until it starts smelling
2. add vegetable broth and bring to a boil
3. add frozen corn, and a little cumin and chili powder
4. add canned ingredients and season with spices to taste
5. reduce heat and cook for 30 minutes
