Simple & fast receipes

Because of the way I work its close to impossible to actually fix daily meals. I am looking for recipes that will give me at least enough to rotate and eat on for a couple of days. I am open for smoothie ideas as well.

    Do you have access to a microwave and a freezer? I batch cook various dishes, freeze them into individual portions and zap them when needed. You have to dedicate a chunk of time at the weekend to cooking, but it saves a lot of time during the week. I make veggie stew, healthy fish pie and crustless quiche which all zap in the microwave pretty well.

    For breakfast on the go I make banana-oat cookies at the weekend. They're literally just mashed up bananas mixed with equal parts oats, formed into patties and baked for 20 minutes. I top with a little peanut butter for a quick, filling breakfast. These keep fine in tupperware for a week. They also freeze well.

    For a healthy lunch just add boiling water to some bulgar wheat (or cous-cous but I prefer bulgar nutritionally) and leave to absorb for 10 minutes. I also add frozen peas and sweetcorn and it cooks them just enough. Mix in some tinned tuna and whatever other veggies you like. Add some vinegar/oil based dressing if you need to. Keeps in the fridge just fine for a few days. I used to make this recipe with brown rice, but bulgar wheat is a lot easier and faster to do.

    I get a lot of ideas from the hungry, healthy, happy website (she came up with the banana-oat cookies). She has an excellent post on food prep as well, which I found extremely helpful (not being paid to endorse, I just found it a really great site!).

    I love www.mccormick.com (a spice company), many of their recipes are pretty quick. Also, I am a huge sandwich lover so that is my go to item. You can also check out the recipe section for more ideas.

    do you mean to take to work or at home?
    if at work, do you have access to a fridge or a microwave?
