Activity level?

I workout 5 days a week for about 30-40 mins at a time doing circuit training. I'd say it ranges from moderate to high intensity. But when I'm not working out, I'm at a desk or doing something else that's otherwise sedentary. So would I put my activity level as sedentary or something higher?

If you're following MFP's method, go with sedentary and log your exercise. If you lose too much, then change to lightly active.

Sedentary. Your exercise isn't part of your activity setting.

With MFP and the MFP method you only include your daily hum drum in your activity level. You log exercise when you do it and get calories to "eat back" to account for that activity after you do it.

Otherwise, use a TDEE calculator and customize your goals.

It all depends on where and how you want to account for your exercise.

This unless you decide to use the MFP settings as your TDEE estimates. In that case if you think that overall you are moderately active with your normal exercise, then set it to that and don't log/eat back exercise calories. The moderate setting on MFP matches closely to my TDEE estimates and it's basically the same as scooby's TDEE estimate for me.

Sedentary and log your exercise separately.
