On the go vegan foods?

The next two weeks are going to be a bit hectic (haven't got a proper day off over the next two weeks and work long, unsociable hours). Between that plus other commitments, I'm going to struggle with food! Yes, I know its important to eat but my freezer/fridge is looking scarce and I have no time to bulk cook like I usually do every few weeks.

I'm vegetarian with a suspected slight dairy intolerance so trying to keep that to a minimum. I really need some ideas for on-the-go vegan foods/meals? I'm on maintenance and just started body strength exercises so really need to fuel my body! I really don't want to rely on convenience foods either. I'm good for breakfasts and have tons of peanut butter/nuts/seeds here.

    seitan veggie sandwiches and tofu veggie sandwiches.
    nuts
    peanut butter and potato chip sandwiches. (That's just me probably)
    fruit
    broccoli with humus.
    chopped veggies in general with some sort of dip.
    kale chips.
    popcorn with nutritional yeast and earth balance.
    popcorn with curry powder
    soy nuts
    cookies
    granola
    quinoa salad
    lentil carrot salad.
    soy yogurt
    fruit cups and apple sauce
    pasta salad
    bean salad
    fruit salad
    fruit. ie grapes, apples, mangos etc.
    edamame
    cereal
