Hey there, today at lunch I had a delicious tortilla crusted Swai fish! However, I'm a bit concerned as when I mentioned that to a colleague they told me it is not a good quality fish and can make you sick.
I then did the worst possible thing and googled it! Anyone regularly eat Swai fish fillets and if so, any pros/cons?

I am not aware of anyone having any trouble with swai fish, with regards to sickness or food poisoning or anything like that. I find the texture to be a bit off sometimes, compared to other fish. But you can pretty much cook it any way you want to. Grill it, bake it with some parmesian coating, make a Courtboullion or stew, slice it thin and fry it, etc. Season it well, and use your imagination.
Try using this recipe, substituting swai for salmon (nothing wrong with great salmon except the price)...

Try them with this sauce...
