Biggest Loser: Better Blueberry Pancakes

I got this recipe from the Biggest Loser Cookbook, and the pancakes were DELICIOUS!!! :heart: I made them without the blueberries as my kids and husband are not as big a fan of them as I am, but even without, we scarfed them all up. :wink: I actually 3x the recipe for 4 of us, and I could have 4x it.



1/2 cup reduced-fat buttermilk

1/2 cup whole-grain oat flour (**I could not find this in my grocery, so I used whole wheat flour, and it worked well.)

1 large egg white, slightly beaten

1/2 tsp baking soda

1/4 tsp salt

I Can't Believe It's Not Butter spray (**I used Pam for the griddle and Smart Balance® Light Buttery Spread with Flax Oil on the pancakes.)

1/2 cup fresh or frozen (not thawed) blueberries

Sugar-free, low-calorie pancake syrup


Combine the buttermilk, flour, egg white, baking soda, vanilla and salt. Whisk just until blended. Stir in the blueberries (if desired). Let stand for 10 minutes.


I cooked them on a griddle after dropping the batter into even size dollops (1/8 cup for small pancakes) and flipping them when they bubbled, but using a large nonstick skillet would work, too!


OOPS! Forgot the calories and all that:

For 4 small pancakes or two larger pancakes:
140 calories, 8 g protein, 20 g carbs, 3 g fat (less than 1 saturated), 5 mg cholesterol, 3 g fiber, 687 mg sodium.

    Nope, but I bought the Kroger brand sugar-free syrup, and it has realllllllllllllllly low calories for a fair amount of syrup. :happy:

    i made blueberry pancakes yesterday that totalled out at 250 calories for my whole breakfast. this included the sugar-free syrup, 3 pancakes, and some strawberries to top them with. here's the recipe for the pancakes i made. i noticed that mine have more protein and fiber.

    Ingredients:
    1/2 dry quick cooking oatmeal
    1/4 egg white substitute
    1/4 teaspoon vanilla
    dash of cinnamon and nutmeg
    1/4 cup blueberries
    non-stick cooking spray
    optional: sugar-free syrup, sliced strawberries, honey

    directions: spray a skillet with cooking spray and heat on medium. combine oats with correct amount of water and microwave for 1 minute. take out and stir in vanilla and spices. stir in the egg substitute after the oatmeal has mostly cooled and stir untill the mixture has even consistancy. scoop 1/3 of mixture into the skillet. (i like to add the blueberries to the pancake after its poured into the skillet so i can place them.) flip the pancake after the side down is golden brown.
  • The "oat flour" you make at home... take oatmeal, any kind, and put it in a food processor and turn on until the oats make flour!! Wheat flour is not the same consistency, etc. that's why u let it sit for 10 mins, so the oats soak up the liquid :D
