Veggie Omelet w/Potato & Bacon

I think we ALL love potatoes and bacon and eggs. 2 breakfast servings. I use either egg substitute or 2 eggs, 1 small round white or red potato, onions, mushroom, spinach (use however much you want of onion, mushroom and spinach), 1 slice bacon chopped up, garlic, salt, pepper.
Dice potato into small pieces and fry with chopped up bacon. Add onions, mushroom, fresh spinach and any other veggie you want. Add garlic powder, salt and pepper (and hot spice if you want).
Add eggs and cook on low. Add any slice thin lite cheese. Cover pan so top cooks. When finished pour your omelet onto half your plate then fold the other half over on top of the first half that is on your plate. No need to flip it inside the pan, you can do it on your plate. then eat. It's really good, filling, and not that fattening. Just only eat half because it's plenty of veggies and you'll be full.
