How many calories are added from shallow/pan frying?

For example I would put some, not very much, oil in the pan or wok, heat it to a high temperature and then shallow fry whatever I'm cooking like a stir fry or whatever. Often I put the finished product on paper towel to soak up the oil and there is oil also left in the pan or wok. It doesn't cook for very long. How many calories or what quantity should I track? It's obvious I am not consuming the entirety of the oil I have used in my cooking...

I prefer to just measure out the oil and log it as is. So measure out a teaspoon or tablespoon, and log that.

Since you are using so little, and there's no way to really measure the oil on the napkin or in the wok with that amount, I would just "eat" the measurement, but make a mental note that your fat and calories will be slightly higher than what is logged when planning the rest of your day.

I also log everything I cook with. I measure the oil I use and don't worry about what is left behind in the pan.

Just measure it out and log it. Some calories will be left behind but it isn't worth the hassle. You can also use water in place of oil when stir frying.

Estimating is just estimating so that means you will not know what you are actually consuming. Measure.

Same as above, if I've measured out 15ml of oil, then I log 15ml of oil, regardless of whether any's left in the pan.

Log the oil. I would rather over log than under.

Same thing happens with salad dressing. You pour 1 or 2 tbsp over your salad, but unless you lick the bowl (!) you probably didn't eat all those calories either.
