Problems with eating enough

My mom is trying to lose weight. MFP tells her that she needs to eat 1800 for her size. She has a small fear of overeating, thinking she might impede her progress. She eats things like "vegetable" pastas and califlower "rice" to replace or supplement meals. It's nice that she's reducing the amount of calories but I think it's too much of reduction. Can you recommend high calorie food to add to her diet?

    I would suggest cooking with olive oil. Adding nuts or avocado to recipes or as snacks. Sprinkle a little cheese over vegetables. Sweetened nuts are a great snack or light dessert.

    If she has cut rice and pasta solely to cut calories, I'd also suggest adding them back, but in smaller portions. Use more sauce and less pasta, 1/2 cup rice instead of full cup, etc. If she is not trying to eat low carb, there is no need to cut out rice and pasta. Just cut back.

    Thank you for your concern for your mother. While there are many factors/concerns involved to keep up my calories I am working to replace carbs with saturated fats. Your mom can try different things to see what works best for her.

    If she likes carbs, then bread, pasta, potatoes, bananas, chocolate, nutella, most cereals.

    I have had the same issue when I became a Pescatarian, Vegetarian that eats fish. I have seen my doctor and have had blood tests and my doctor says my health has improved a great deal along with 55lbs of rapid weight loss.

    I keep away from starches and carbs. The best way to feel comfortable with her diet is to visit her physician for a full physical and blood tests. Then the doctor can determine if there is a concern or not.

    The only thing that would be a little worrying is in the early stages of her type of eating is that there will be definite highs and lows and learning to control energy crashes. Again, a full physical is the best way to start and determine if she really is eating too little. Hope this helps.

    Thank you everyone for your advice! She trying to lower her carbs, but not low carb per say. I just don't want her to hurt her progress by setting restrictions that impede her journey.

    Most dieters are afraid they'll over eat. Overeating leads to being fatter and they want to get smaller, not bigger. Are you suggesting that you think your mom is taking it to extremes? 1800 calories is a lot of food and not really an amount that, per se, indicates a problem.

    Veggie pasta may be the healthier choice. Some people who lose weight focus on their health and make a whole lot of changes to their diet and exercise program. This is part of what experts call a "lifestyle change" and people who have successfully lost weight and kept it off have usually done this.

    None of it sounds all that worrisome to me. But you know her best. If you think something is up, ask her to talk to her doctor.
