I'm making kolaches from scratch, plan to enjoy them with rest of family but would like to have a fairly close idea of calories. Would this work? Weigh finished dough & sausage (will not know how many I will use so likely to have to edit total grams) using grams then make serving 100 grams. Am I right in thinking weighing the finished kolache (using 100 grams as portion) would then give me a correct calorie account. I don't want to be fanatical about it but would like to be fairly close.

Yes, you can choose 100g as a serving size and log using the final weight of one item. If one item weighs 119g, log it as 1.19 servings of 100g. By the way kolache has the sweet center filling. What you are describing would be klobasnek.
