trouble eating more

ok so i know that in order to lose weight healthy way i should eat more (TDEE-20%), and i am ready to do so...only problem is i just couldnt eat that much...i have added nuts ,cheese ,yogurt everything to my diet to up my calories but i never seem to go in 1700-1800 range....i dont want to up my intake with junk....also i am pure vegeterian....may be thats why i am not losing any weight from last 30 days ....need advice...i workout 5 days a week and spend around 300-400(since i am failing with upping my cal..i drop my cal burn )...

    also i am not doing it intentionally(eating less)...i eat every meal,snack,protein...everything..and never keep myself hungry..

    What is "Junk" either way you're going to have to eat caloire dense foods be it tbsp of peanut butter, oil on your food, or pop tarts.

    people will want to see your food diary to assess where you can make changes.

    I usually bulk up my calories with peanut butter or breads/pastas with a little evoo.

    Yup, what they said. Adding in more of those calorie dense foods like you already mentioned is really the way to go. Throwing in some breads/pastas can also add up really easily without adding tremendous quantity to your intake.

    You will eventually get used to the amount, I struggled for the first month when I went from a deficit to a surplus and had a 600 calorie swing to make up and really had a hard time getting it all in without eating garbage.

    Also, adding in a little junk here and there is not an entirely unhealthy thing. A scoop of ice cream or a candy bar every now and then will get your calories where they need to be and don't necessarily have to blow your diet all together.
