QUICK...SIMPLE...HEALTHY RECIPES NEEDED

If you have a quick and simple recipe that is also healthy, I would really appreciate it if you could give it to me! I am new to meal prepping and drastically trying to make a change in my eating habits.

I like baked chicken with vegetables and fresh fruit.0

In a large bowl (preferably one that has a cover so you can put the whole thing in fridge later) mix together:
(if you want to eat right away you can steam or microwave the frozen veggies first, but I usually make it ahead and let them thaw naturally)
1 bag of frozen corn
1 bag of frozen peas (optional)
1 chopped red pepper
1 chopped onion
some chopped purple cabbage (optional)
1 bunch of cilantro chopped (to taste, I like a lot)
1 can of black beans (drained)
add some left over meat (like grilled chicken) (optional)
Lots of cumin (to taste, I find it takes a lot)
This works great as filling on tortillas for either cold or warm tacos (siracha mayo goes great with this!). It also works as a side dish or as a cold salad.
It's fast, easy, tasty and healthy! You can substitute any veggies you want, sometimes I use broccoli.

I just made this for lunch today
Mediterranean Tuna Salad
(101 calories / not including crackers)
Makes 1 serving (although can be doubled/tripled for left overs for future meals)
- 1 pouch StarKist low-sodium tuna
- 1 oz roasted red pepper, chopped
- 3 Kalamata olives, chopped
- 1 tsp capers
- 1 tsp relish
- 1 lemon wedge, juice
mix & serve with whole grain crackers

For one person: one polish sausage (approx 250cals), 2 cups brocolli, 1/8c shred cheese
Slice sausage and brown in a pan. Toss on frozen brocolli and add a bit of water. Cover and steam until brocolli is done. Drain water. Sprinkle cheese ontop. Cover and remove from heat. Serve once cheeseIis melted.
Takes under 10minutes and can be adjusted to serve as many people as needed.0 -
Do you pinterest? Lots of ideas on there. There is a lady that has a blog too where she does her shopping and puts the meals together in freezer bags for crock pot recipes. I've never done it bc I'm just not that diligent. But it sure makes things look easy0

Fritata, heavy on the vegetables. 6 eggs, 3 big fistfuls of spinach,a pepper, 1/2 onion and 1/2 cup feta is good for 3 substantial meals. Cook in an ø8 or 9 inch skillet.0

I will make it short! I would like to help you by sharing what I have done. I use the MFP recipe tab to create or import recipes from the internet with the foods that I like. Since I have to create the recipe for one person it allows me to adjust the amount that I will be creating and eating. I find most recipes are created for a large number of servings so you will need links to conversion tables to make adjustments if you are importing recipes. You can purchase inexpensive containers for left overs to freeze or eat later in the week. I prefer containers instead of freezer bags because I can reuse them and they store easier. I have been able to create enough recipes to allow me to eat a variety of foods for all occasions without having to repeat the same thing very often. One other note in that I use a slow cooker to help me a lot of the time because it is not as time consuming.0
