Bacon, Egg, and Cheese Scramble in a Cup: 115 calories
Options
Came across this simple and quick microwave recipe...Modified to use Velveeta slice and lower calories. Great for breakfast in a hurry and very tasty.
INGREDIENTS
PAM® Original No-Stick Cooking Spray (Butter flavor tastes better!)
1/2 cup (4 oz) Egg Beaters® Original (50 Calories)
1 slice Velveeta cheese (35 Calories)
1 tablespoon real bacon bits (30 Calories)
Dash ground black pepper
DIRECTIONS
Spray inside of large microwave-safe mug with cooking spray.
Stir together Egg Beaters, bacon, onion and pepper in mug.
Microwave on HIGH 1 minute. Stir; Add Cheese slice; microwave 30 seconds more or until set. My microwave is 1100 Watts and 1:30 worked perfectly.
Serve immediately. For extra taste, spray with Parkay or I Can't Believe It's Not Butter! spray
COOK'S TIP
The scrambler puffs up and fills the mug while cooking. It falls quickly once removed from microwave. Use a large (15-ounce) microwave-safe mug to hold the ingredients and to reduce the chance of overflow. Mugs that are wider and shorter work best. A 2-cup glass measure may be used as well. Microwave wattages vary; adjust cook time as needed. Cook the scrambler just until the egg is set.

Ohh I've been making these since I was little. My dad told me I could use the microwave if I was hungry and everyone was still asleep. I used to cut up sausage links and different things into my eggs.0
