130 calorie applesauce bran muffins

Ingredients:
1.5 cups wheat bran
1 cup white flour
250mL 2% milk (I actually mixed 200mL 3.25% with 50mL water)
1 egg
1/2 cup unsweetened apple sauce
1 tsp. baking soda
1 tsp. baking powder
2/3 cup brown sugar (I used demerara)
3/4 tsp. vanilla extract
Steps:
1) Add wheat bran and milk to a medium-large mixing bowl, and let sit for 5-10 minutes.
2) Add remaining ingredients to the bowl and mix.
3) Spoon into lined muffin tin.
4) Bake at 375F for 15-20 minutes (mine took 18), until a toothpick inserted in the middle comes out clean, and muffins are lightly toasted.
Makes 12. Source (slightly modified): Applesauce Bran Muffins
This makes my ideal plain bran muffin! It's not too sweet, but not too boring. But you definitely have to like bran muffins to like these, don't expect a cake. I thought they came out fantastic, so I decided to share. I might add blueberries next time. I was a bit skeptical about trying this recipe, since I figured such low fat would be a disaster. It doesn't seem to be a problem!

Serving size: 1 muffin. Calories: 128; Carbs: 28g; Sugar: 14g; Fiber: 4g; Fat: 1g; Protein: 4g.
