We call it crawfish but here are some ideas: Gumbo, etoufe', and fried crawfish tails but they are not too healthy. I would go with Crawfish Gumbo myself. You can Google that and a ton of recipes will come up. Also you can basically substitute crawfish for chicken in soups and casseroles, that's what my sister in law does.

Sharon, we must be neighbors! I suggest a crawfish fettuccine. Creamy, yummy, not-so-healthy goodness!! Fry up some pistolettes and start your diet tomorrow. :)

Thanks ladies for the ideas. I went with making a Thai Tom Yum soup with them as I didn't have the stuff in for gumbo

I even made a special seasoning mix for it. ;) What's not shown is the table of vodka and aquavit right next to the two coolers of beer.

OP this is one of our favorites - it is not at all healthy but my husband requests it every year for his birthday...

I actually buy the pound of frozen crawfish tails and use half for the recipe above, then the other half I make jambalaya with chicken, andouille, and crawfish tails.

Its not a crawfish boil with out beer or liquor of some kind. All you need is some ketchup mix dipping sauce and butter for the potatoes.

there was an abita pecan sixer in there for me, the rest though was premium CA and Oregon stuff, including a 4 of Old Rasputin for me.

oh, if you have the crawfish butter, use it in the sauce. Don't lose it.

Your pic just made me look up to see how long it is till Mardi Gras... and I just realized I'm going to be in Rome on Fat Tuesday. Guess I will be celebrating with pounds of pasta and red wine instead of crawfish....

If I'm invited back to this conference I spoke at last year, I'll be in Rio for carnaval.

crawfish actually makes a delicious bisque. I have tried to make this personally but this is the copykat recipe for the bisque from Pappadeaux which is the best Cajun place on the planet. I adore that restraunt. Like the closest one is 800 miles from me and we're planning a trip so I can take my hubby there.

    Ingredients

    3 pounds Crawfish
    2 ounce Olive Oil
    1 teaspoon Paprika
    1/8 teaspoon Cayenne Pepper
    2 quart water
1/2 cup each, chopped: onion and green bell pepper
    1 tablespoon Tomato Paste
    3 cup Whipping Cream
    1/2 cup Chopped Tomato
    2 ounce Brandy (4 tablespoon)

Do you have a butcher or specialty meat store near you? Mine can special order wonky meats for me like elk and gator. I had to call just about every meat/grocery store in town to find them but worth it.

Possibly I could special order them from the fish market, or maybe even Whole Foods, but I'm not sure I'm willing to fork over the cash. I may look in to it though.. If it's less than lobster then I'm in.
