    Diced tomatoes, chicken broth or a can of cream of mushroom soup.

    I'm a HUGE fan of coconut milk + yellow raisens in my rice- gives a really delicious sweet flavor- but I don't make curry that often so it's a waste to me. LOL

    Otherwise I eat my rice pretty much plain. I'll add soy sauce- and eat it flat out. Or I do black beans with S/P diced onion and greek yogurt as a sub for sour cream.

    nice black beans and rice dish- got me through some lean times.... Oiy what am I talking about- sh1T still gets me through lean times on my pay check to pay check budget! LOL

    Curry powder and a small amount of coconut oil, and a little salt.

    I prefer brown rice as I prefer the "nuttier" flavor...I usually don't add anything unless I'm doing a pilaf, but I generally cook my rice in chicken broth; it adds a lot.
