If I put "workout 3x per week" on my settings, does that mean that I don't log my exercise 3x per week?

You still log your exercise. It's just there as a goal for you to try and achieve.0

It gives you a goal of how much calories you should burn in order to lose the amount of weight that you'd like to lose in a week. So no, its simply for goals and numbers. You still have to log in your exercise.0

Correct. If you put that you work out regularly, it will increase your calorie intake. If you change it to sedentary, then you would log your exercise and eat back your calories.
ETA: You're hair is absolutely amazing.
Activity level should be based on your activity before exercise.
She's asking about the part that asks how many times your going to workout. This part doesn't effect calorie goals. I can say I'm going to workout 7x a week or 0x a week and my calorie goal doesn't budge from 1350.
