Baked Spiced Chickpeas
Found this the other day (don't remember the website sadly but they adapted it from Veggie Grettie). It's amazing! Now I'm getting to try a sweet spiced variation all on my own. I'll post it if it turns out.
Baked Spiced Chickpeas
2 cans Chickpeas
1 1/2 tbsp olive oil
1 tbsp spice mix
Spice Mix
2 tsp of sugar (I used 2 packets of splenda)
1 1/2 tsp ground cumin
1 12 tsp paprika
1 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp ground allspice (optional)
1/2 tsp salt
Directions
Preheat the oven to 425
Drain and rinse the chickpeas. Place chickpeas on a layer of paper towels and rub with another paper towel. Allow to air dry while preparing the spice mix. Pour all the spices into a bowl and mix well.
Place the dried chickpeas into a bowl and toss them with olive oil. Once coated, sprinkle on the spice mix to taste. Reserve extra spice for another batch.
Place seasoned chickpeas on lined cookie sheet (parchment paper worked fine). But sheet in oven 40-50 minutes, mixing halfway through. Watch carefully near the end to avoid burning. They will come out of the oven fairly crunchy and will become crunchier as they cool.
