I recently reread a book and thought I should share an excerpt.
This is from Guided Meditations, Explorations and Healings by Stephen Levine.
"Many people concerned with health or weight are thoughtful about what they eat but the real problem is how we eat. We eat on automatic. A forkful of food dropped into the mouth while still chewed is approached with another forkful waiting like a dump truck to empty its contents and be on its way for the next haul. We chew facing a full fork, leaning into the next moment in order to consume more. We chew without tasting. We swallow with little awareness of our intention to swallow. We hardly see the food except on its first appearance, we hardly smell the food except on first approach. We hardly touch the food or sense its textures and consistency except on first consumption and even then only for a split second or two. We seldom feel the utensil in our hand. We seldom hear the utensil scraping the plate or the food crunched on the teeth. We are seldom aware of the tongue's activity moving the food about for equal distribution on the grinders."
The next chapter is a meditation on taking a single bite that is truly amazing. I usually have about 20 minutes to eat at lunch and I wolf down my food so fast that I don't get to taste it and am almost never satisfied. On Friday, It took me the entire 20 minutes to eat a 1/2 cup of pasta. I highly recommend this book.
