check out the recipe builder. tracking mixed food items like casseroles is easier if you make a recipe for it. not sure if the link will work, but you go here: http://www.myfitnesspal.com/recipe/box

You need to go into recipes and log all ingredients and number of servings. Then save and transfer to your diary. Hope that helps.

Use the recipe builder - http://www.myfitnesspal.com/recipe/box - if you're the one making it. If not, search the database for a same-name recipe, pick the highest option and guess. Unless it's happening quite regularly that you're eating casserole prepared by someone else - in that case, ask for details about its preparation or ask for the recipe, then enter the recipe yourself in the aforementioned recipe builder.

I measure out (weigh on my scale) each ingredient as it goes in. When the recipe is done, I weigh the whole thing in grams. I divide that number by the number of servings in the dish. That way I know how many grams I am supposed to serve myself.

I also add it in as if it were a new recipe manually each time, since I cook from scratch and the size of the veggies varies each time.
It can get tedious, but it's (I think) pretty accurate.
