Just curious about label reading

I read a lot about people reading labels for calories, sugar, carbs and fat. And even though I pay attention to that, the first thing I check is the ingredient list and generally staying with a simple one. It's shocking how much "c r a p" there is in something so simple as bread.
So just curious how serious you guys take the ingredient list, or if it's really just more about fat, carbs, calories and sugars.
