Huevos Rancheros- your way please!

Hi guys
I've decided to make huevos rancheros for breakfast in the morning- day off and all that- sudden hankering for those spicy eggs! I was just interested in how other people do them- there are a few variations floating around the internet and although I usually use a recipe off a BBC cooking show I wondered how other people do them (and if they are quicker than mine:P)

I usually just warm a corn tortilla and top with re-fried black beans (I like to add a little chopped jalapeno or hot sauce and some lime juice), a fried egg and then garnish with pico de gallo, cheddar cheese and cilantro. Serve with a lime!0

Tortilla, canned refried beans, scrambled eggs (with ground red and black pepper), salsa, shredded cheese. Oven for 10-15 min at 325.
It's faster to pop it in the microwave, of course, but I think crisping the tortilla in the oven is worth it.0 -

Mine is very different. I chop and saute onion, red pepper, and fresh tomatoes in a pan lightly coated with olive oil cooking spray. Add a good bottled salsa to taste (hot, if that's what you like) Drop eggs onto this mixture, and sprinkle low fat jack cheese on top. Cover and cook just until the egg whites are cooked through. Warm tortillas to serve with the dish. This makes a large, healthy, low calorie dish...and it tastes great!0

Thanks guys... Interested to see that some of you guys across the pond put beans in it for breakfast! I've never put beans in it! BobbieInCA that's similar to how I make it and it's truly delicious!0

Mmmm. Huevos rancheros. I haven't had those in forever. Drizzle of oil in a pan. Onion and garlic. Whatever greens I have around - orach is a favorite. Guajillo/tomatillo salsa, then in with the eggs.
I dry-toast a tortilla, add a smear of beans if I have them around, scoop on veggies/eggs and dive in.0
