Coconut Lime Chicken Bowl

I made a coconut lime chicken bowl for dinner tonight and it was so good! In a bowl, combine a can of coconut milk, the juice and zest of two limes, 2 tablespoons of ginger, 4 cloves of garlic, 2 tablespoons of brown sugar or honey. Add as much chicken as you want. Let it marinade for 4-12 hours. And bake or grill until down. How did I serve it? I made Caribbean style rice and served the chicken on top! For yummy garnishes, I topped with cilantro, green onion, lime wedges, shredded carrots and peanuts that have been course my chopped! Now, I felt the coconut was somewhat lacking so I think next time I will toast coconut to the finished bowl! It was really good and my parents and most of my siblings likes it!
