Cheesy Italian Dressing
This is SO good. I got this recipe from "Eat What You Love Everyday" by Marlene Koch:
2 Tbsp Grated Parmesan Cheese
1 Tbsp Olive Oil
1 1/2 tsps Dijon Mustard
1 tsp Red Wine Vinegar
2 Tbsp Hellman's Light Mayo
2 Tbsp Water
1/4 tsp dried Oregano
Whisk all ingredients together or put into a container and shake vigorously. I found it to make about 4 to 5 Tbsps total. It was a LITTLE too thick for my liking, maybe add a tiny but more water to get the consistency you want.
I ate this on a salad with grilled chicken, a few croutons and tomatoes and it was delicous. Almost tasted like Caesar salad.
