Stuck for weekday breakfast, and lunch and snack ideas for work

Hi, I am looking for ideas for work for lunch and snacks. ATM I make soups or pasta, but would like to mix it up a bit. I am trying to cut down on bread and processed foods. When I am not working I can come up with a variety of yummy meals, but I don't seem to be able to come up with much that will be good and enjoyable for a lunch box, and not cost a lot to make. I'm getting back into things after Christmas, but struggling, so hoping that some inspiration will keep me on track. I would appreciate any lunchbox suggestions that work for you x x x

Oooh i have started making up a batch of egg muffin style things, basically 6 eggs and whatever you fancy in them, so i use one rasher of bacon and some chopped fresh tomatoes, or spring onion and a tiny amount of cheese.
Basically, mix the eggs up in a bowl.
Lightly grease the muffin tray ( the thing i used to cook cupcakes in lol )
put whatever extra you want in the tray, eg, chopped toms.
Pour the egg mix in until it is half full.
Bake in the over for about 15-20 mins at 200 degrees.
Let them cool, pop in bags ( i have 2 a day ) which is about 100 cals, but no sugar and all that Jazz that comes in cereal bars etc. You can freeze them too. 6 eggs makes 12. So a good way to start the day with a bit of protein toox

You can make some very easy meals in a slow cooker - you can then portion them out so you can either eat them through the week or freeze them in individual portions and then microwave at work.
For snacks, think about things like nuts or making protein bars on a Sunday.0 -
A super easy to prepare and filling salad:
Bulgar wheat (50g) - you just pour boiling water on and leave for 10 minutes. Sometimes I use brown rice instead, but it takes longer to cook. Cous cous works too but I prefer bulgar as it fills you up for longer.
Add 1/2 tin of tuna, a cut up hard boiled egg and whatever veggies you like. I enjoy peas and corn (do them along with the bulgar wheat) but almost anything works.
I use a vinaigrette of red wine vinegar, a little olive oil and maybe some lemon juice. Very tasty.
I usually make two portions at once and keep in the fridge for a day or two. Just add the vinaigrette at the last moment.0 -
I sometimes make my own sushi rolls using fresh veggies and tofu (you could use meats too if you eat meat). Vietnamese rice paper rolls are also a great one to take for lunches but they take a bit of practice to have them looking nice0

This recipe for Spicy Turkey Sausage looks good and I plan to make it today (and double it for the freezer). Ground turkey is cheap, tasty and full of protein. I am intending to use it for breakfasts but will also try it as our protein at dinner.0
