Twice Baked Potatos! SOOO Good!

Just look at it, so beautiful with it's potato-y goodness! It was very simple to make, and would be easy to substitute other vegetables and meats into. Around 300 calories, 21g protein, 10g fat and 45g carbs.

Ingredients!
1 or more small - medium russet potatoes (150 calories each)
2 slices turkey bacon (around 70 calories)
1/4 broccoli florets cut up really small and blanched until tender-crisp (8 calories)
2 tbsp 1% milk or whatever milk you want (11 calories)
2 tbsp shredded Light cheddar cheese (35-40 calories)
Dollop of Plain No Fat Greek Yogurt (around 15 - 20 calories)

Directions!
Wash and pierce potatoes and bake at 350* until done, approximately 40 minutes for two, or microwave for 5mins and then in 2min intervals until done.

While potatoes are cooking: Cut up broccoli into small pieces and blanch until tender-crisp, 1-2 minutes. Cook turkey bacon according to package, let cool and crumble. Grate cheese if needed.

Once potatoes are cooked, allow to cool enough to handle and then cut a hole in the top of each potato and scoop out insides into a small bowl being careful not to rip the skin. Mix with milk, broccoli, half the cheese, half the bacon and salt and pepper to taste. Shove it all back in the potato skin and top with the rest of the cheese and bacon. Bake for another 10-15 minutes or until heated through.

I served mine with seasoned chicken breast but you could easily have one of these as a simple meal.
