    Taco Tuesday here too. I do shrimp and buffalo chicken tacos. Topped with romaine lettuce, pico de gallo, and cheese. And ranch dressing for the buffalo chicken.

    But then again my hubby is really sick ( like projectile vomiting sick) so I may not cook, just heat up some leftovers for the kids and I.

    Turkey burgers, green salad and oven fries. I ground up a Honeysuckle turkey breast last week, and we've never eaten ground turkey before, so this should be interesting. I told my husband to eat a big lunch. I'm using my Italian grandma's meatball recipe, but without the beef: diced onions, breadcrumbs, egg, garlic, parsley, salt/pepper, a little parmesan cheese. Mixed it all together late yesterday to get the flavors all blended. I entered the recipe into MFP and each 4 oz burger has 293 cal. I've made small homemade burger rolls, but I'll skip the bun and have the oven fries instead.

    Ham & bean soup.....very small amount of ham,with onion,celery & carrots.Always good in cold weather.Salad on the side.

    Fajitas! And we are making a big batch so we can have leftovers.
    I plan on putting some of the vegetables into some eggs tomorrow night and wrapping it all up in a corn tortilla. Nom nom nom.

    I'm having chicken fajita and bean burritos tonight and I am making enough to have for lunches the next couple of days. Tomorrow night will be pot roast with onions, carrots, and potatoes.

    Chicken Squares (My MIL's recipe, but basically this without the bread crumbs), peas, and sweet potato wedges. Chicken squares definitely aren't low cal, but they sure are tasty and my husband loves them.

    Breakfast for dinner is a real easy way to keep it under 600 calories. One of my faves. Egg substitutes are only 25 calories per serving, so a 4 "egg" veggie omelet is under 200 cals. Add some cheese to get it up to 300. Bacon is about 40 calories per slice, 3 slices gets you to 420. A bowl of grits on the side is about 100 but could be more if you add margarine. If you're not into grits, toast is (mostly) under 100 cals per slice.

    We are doing a Tex-Mex pulled chicken in the crock-pot. With roasted brussel sprouts on the side. It's a new recipe which me modified a bit. Hopefully it tastes good!

    I like making breakfast for dinner when I get bored with dinner too, but mostly because I realize that even a boring dinner is way more exciting than more eggs and veggies. :smile: it makes me appreciate my lean protein and roasted veggie dinners.
