I have no idea what to do with this gluten free flour!?

I bought a huge bag of Krusteaz gluten free flour. It says on the bag "replaces wheat flour 1 to 1" first of all, I dont know what that even means. Second, I tried to make a pizza dough with this flour and it did not work at all. I googled and Pinterested so much to try and find SOME sort of recipe I could use this flour in, and I found NOTHING. So i was wondering if anyone else out there knew what to use this flour for? I would like to use it to make homemade pizza dough and bread.

    I can't help you with a recipe but did you weigh the flour or use a measuring cup? The denseness of the flour could vary quite a deal if just using a measuring cup which could have an impact on your recipe.

    Any recipes that call for an all purpose gluten free flour mix would probably work,
  • Yes, when baking with different flours it is best to do it by weight (1c of regular flour equals 4 1/4 oz) but if you don't have a scale it really shouldn't be that bad. My guess is that when you made your dough it didn't really rise or stick together well. When you use gluten free flours to made breads it is missing the gluten which is what helps hold it together. What you need to make successful gluten free breads is xanthum gum, just add 1/4 tsp per cup of flour. When doing pizza doughs it doesn't quite turn out the same as regular dough, it's usually more spongy and sticky. You need to form your dough into whatever shape you want and pre-bake it a little before adding toppings.
