Dutch oven cooking (meatloaf)

ok so Ive done alot of camping over the years and did historical re-enacting since I was in diapers...I have a full compliment of cast iron cookware.

I found this recipe a few years ago and the family loved it, naturally I cant leave any recipe alone so here is my spiffed up version)

ok to keep this tasty AND remotely "healthy" you dont use just beef


one pound EACH of pork, lean beef and veal (or turkey or chicken)--total of 21/2 to3 lbs
1 egg
1.5-2 cups seasoned bread crumbs (stale croutons work great)
1/2 cup of fresh grated romano or parm
season to taste (I use lots of herbs I dried over last summer)
=thyme, basil, garlic, parsley, cilantro, sage, onion powder, ground black pepper

using about 1/2 cup of extra virgin olive oil sear all sides for about 3-4 minutes a side then turn to low and simmer for 60 min or until internal temp is about 150

remove from oil and let drain on a rack for 10 minutes before slicing, should make roughly 10-12 servings.
