Potassium!

How on earth do you get enough potassium in your diet? I don't have much of an issue with keeping my sodium intake under control, but adequate potassium is eluding me. 4700mg a day is an awful lot. I'm aware of all the high potassium foods out there, but I don't seem to be able to eat enough in one day to meet the goal. I'm having really obvious signs of a deficiency and need to kick things up a bit. I'm a vegetarian, mostly vegan right now, eating only at home using whole food meals I cook from scratch myself. Trying to lose a bunch of weight, too, so attempting to manage this on about 1600 calories a day. What to do?
