Help I'm just getting started!!

So I'm finally taking the time to use this app but I'm really confused. I never eat my calories for the day, my fat is always over, and so is my protein lately. My carbs are low. Is the good to stay within the percentage that they give you for all three categories? The calories that it set for you are you suppose to get up to that or as long as you stay under our ok. Another think that confused me is one day I hard dinner and my fat was ok, but the following day I had the exact same thing for lunch and it said I was I over my fat? So co fused!!
