Healthy and delicious Dinners that make great take-to-work leftover Lunches

Hey all!
Trying to jazz up my workweek menu and stay motivated to lose some weight while still eating food that tastes delicious and that I get excited just thinking about in the middle of the day. I've found that doing this makes eating right so much more bearable - if if you like to cook, more fun! There's no reason to eating boring food or the same thing over and over. Extra bonus is when dinner leftovers make great lunches for the next day or two!
Here are a few of my recent yummy (and relatively healthy) dinners:
-Turkey chili with kidney beans
-Lightly seasoned baked chicken breast (boneless/skinless) with a cup of butternut squash soup (or simple steamed and mashed butternut squash)
-Chicken lettuce wraps made with chopped chicken breast, onion, green/red/yellow bell pepper, chopped peanuts, light soy sauce, and Boston Lettuce for the cups
-Grilled (or pan seared) steak tips (or any steak cut, I just can't resist steak tips) with a bed of arugula and cherry tomatoes (after you take the steak out of the pan, throw the cherry tomatoes in the pan with the leftover steaky juice goodness and 1/4 cup or so of balsamic vinegar, then reduce until the tomatoes start softening and splitting. Add the tomatoes to your plate and drizzle the balsamic reduction over your steak, tomatoes, and arugula. Noms!)
Obviously everyone has different tastes, but these are some of my favorites. I'd love to hear what others are making to jazz up their weeknights while sticking to their healthy eating goals.

I eat a huge variety of meals for dinner, and almost always bring leftovers. Can't list them all, so I'll just go with this week.
Sunday - pork chops, pan seered then baked with brown rice stuffing, roasted asparagus
Monday - Venison stew - vension, butternut squash, turnips, carrots, onion, garlic
Tuesday - Beans and rice (mix of rices, 2 kinds of beans, chopped carrot, onion, garlic and radish and jalapeno, cajun seasoning)
Wednesday - grilled salmon and butter browned carrots w/ scallions (season and grill salmon, add 1 tsp olive oil, 1 tsp butter, 2 sliced carrots and enough water to fully evaporate by the time the carrots are crisp tender to a small skillet, cook until water is gone, add 2 chopped scallions, stir and cook for a couple more minutes to brown the carrots and wilt the onion)
Thursday - Roast chicken breasts, steamed broccoli w/ cheese
We actually finished off all broccoli last night, so for lunch today I chopped up a chicken breast and added it to a can of Progresso light soup.0
