My low-calorie chocolate fudge brownie

This is Dan Lepard's recipe but I mix it up
* 100g self-raising wholemeal flour (with seeds and grains)
* 50g dark muscavado sugar
* 115g baking cocoa powder
* 100g butter
* 200g sweet potato (cooked and pureed)
* 2 eggs
* 2 TBSP vanilla extract
- Oven 1 sweet potato for approximately 35-45 minutes, or microwave and scoop out the flesh (throw away the skin) and leave to cool fully
- Line a tin (approximately 18cm) rectangular tin with baking paper, turn on oven to gas mark 4, or 180 c (fan assisted, 160 c)
- Put the butter and cocoa into a large pan, and put the hob on the lowest heat until it has fully melted and is thick and dark. Leave to cool slightly
- Beat the flesh of the sweet potato & sugar into a mixing bowl until it is smooth and have SOME lumpy bits in from the sweet potato
- Beat in the butter/chocolate mixture that you heated up on the hob earlier, and then add in 2 eggs, vanilla extract - beat until thick
- Add in the flour, and fold into the mixture until fully combined (do not overbeat)
- Spoon into baking tin, and bake for 25-30 minutes until it has risen slightly, and the top of the brownie is slightly crusty. Leave to cool FULLY before removing from the tin
- Cut into square slices, and enjoy in moderation! This is approximately 200 calories per square
