Made a roasted Cauliflower Soup tonight tasted really good. Here is the ingredients and total Calories
GV=Great Value or Wal-Mart Brand
1 head of Cauliflower - 108 cal
2 teaspoons GV Olivin Oil - 240 cal
1 tbsp GV salted sweet cream butter - 100 cal
1 med white onion - 93 cal
2 tablespoons GV Garlic - 30 cals
4 slices GV smoked ham - 120 cals
1 cup of silk almond milk unsweetened - 30 cals
4 cups GV Chicken Brooth - 40 cals
4 slices natures own wheat bread - 160 cals
3 tablespoons pecans 150 calories
3 tablespoons chives - 3 cals
Total Calories - 1074
Total yield 9 cups
serving size 1 cup - 120 calories
Baste Cauliflower with olive oil and roast 40 minutes at 400 degrees still occasionally.
cube and grill your onions, ham and garlic in the butter in a stock pot.
add the broth, silk, and cauliflower after it is roasted. Bring to boil, simmer 20 minutes, while this is simmering, toast your bread and make bread crumbs out of it. add it to your stock pot. use blender and blend until smooth, top or garnish with chives and ground nuts.
